Zaranda, Zorzal and Lágrimas Negras are on the list of Madrid restaurants where he has left his mark. In the new Desencaja, Sáez brings out his knowledge to offer dishes with a traditional background and modern resolution.
Using seasonal products, he prepares the only two menus offered daily. For 28 euros (drinks not included) he offers a tasting menu called Viaje a la Luna, consisting of several appetizers, four courses and a dessert. And for 38 euros, the menu Viaje al centro de la Tierra (Journey to the centre of the Earth), with five courses and two desserts. There is also an abbreviated lunch menu for 18 euros. On the tables, recipes with more technique than they appear and a more than acceptable level. Among its autumn specialities, the broken egg with potatoes and marrow, a delicious dim sum of chicken in pepitoria, stewed beans, Madrilenian-style tripe, rice with crust, fish of the day (horse mackerel) with sautéed chard, and oxtail mollete with salad. Finally, brioche soaked in cream and egg with coffee ice cream. The wine cellar is small, but offers an acceptable selection of wines by the glass.
